The Hydra restaurant, located in Calpe, has been the hotel establishment awarded as the most responsible with sustainability in the province of Alicante, thanks to its pioneering measures in favour of the environment and its activism in the circular economy. This is a recognition awarded by Ecovidrio, the non-profit organisation in charge of managing the recycling of glass packaging waste in Spain, which has announced the most responsible and committed to the sustainability of our coasts, within the fourth edition of the Green Flags Movement and the 'II Barometer on the sustainability of our coasts'.
In this sense, the Hydra restaurant uses local products, its own organic vegetable garden and fish from the nearby fish markets of Calpe, Xàbia, Dénia and Santa Pola. It also avoids food waste, using the leftover fruit and vegetables to feed the chickens and the surplus for the staff or donating it. In addition, much of the furniture and decorative elements come from reused items and the lamps are handmade, made in the nearby town of Gata de Gorgos. Finally, it also ensures energy savings, both in lighting and water consumption.
More than 12,000 establishments from 140 coastal municipalities in Andalusia, Valencia, Catalonia and the Region of Murcia took part in this new edition of the 'Barometer on the sustainability of our coast's hotels and restaurants. In total, nine coastal hotel and catering establishments have received awards, including two located in the Valencia Region: the Hydra restaurant (Calpe, Alicante) and the Casa Montaña restaurant (Valencia).
